Ingredients

  • 2 each boneless, skinless chicken breast
  • ¾ cup all-purpose flour
  • 1 tsp cayenne pepper
  • ¼ cup mayonnaise
  • 1 tbsp hot sauce (Frank's or similar)
  • 2 each brioche buns
  • ¼ cup dill pickle chips

Instructions

    Place chicken between plastic wrap and pound to 1/2-inch thickness using a meat mallet or rolling pin.

    Mix flour with cayenne, salt, and black pepper on a plate. Pat chicken dry, then dredge both sides until fully coated.

    Heat 0.5 inch neutral oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Slide chicken into oil and fry without moving until golden brown and crispy, 3–4 minutes per side. Internal temp should reach 165°F.

    Stir together mayo and hot sauce, then spread on toasted brioche buns. Layer crispy chicken and pickle chips inside.
