Ingredients
- 2 medium (6 oz each) boneless, skinless chicken breasts
- ¾ cup all-purpose flour
- 3 tbsp honey
- 2 tbsp hot sauce (Frank's or similar)
- 2 whole soft sandwich rolls or brioche buns
- 2 tbsp mayonnaise
- ¼ cup dill pickle chips
Instructions
- 1
Place chicken breasts between plastic wrap and pound to 0.5-inch thickness using a meat mallet.
- 2
Season chicken generously with salt and black pepper on both sides.
- 3
Dredge each chicken piece in flour, coating both sides evenly and shaking off excess.
- 4
Heat 0.5 inch neutral oil in a 12-inch skillet over medium-high until it shimmers and a pinch of flour sizzles immediately, about 3–4 minutes.
- 5
Slide chicken into hot oil and fry 4–5 minutes per side without moving until edges are deep golden and internal temp hits 165°F.
- 6
Transfer chicken to a paper towel–lined plate. Stir honey and hot sauce together, then brush over chicken.
- 7
Toast buns in the same skillet for 1–2 minutes until lightly golden, then spread mayo on each half.
- 8
Assemble: place chicken on bottom bun, top with pickles and second bun half. Serve warm.
