Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 medium green plantains
  • 2 tbsp fresh ginger, minced
  • 1 can (14.5 oz) canned diced tomatoes
  • 1 medium red onion, sliced
  • 1 whole habanero or scotch bonnet pepper
  • ½ cup vegetable oil for frying

Instructions

    Cut plantains lengthwise, peel, and slice into 1/4-inch-thick batons.

    Heat 0.5 cup oil in a large skillet over medium-high until shimmering. Fry plantain batons until golden and crispy, ~5 minutes per batch.

    Transfer plantains to a paper towel–lined plate. Keep 2 tbsp oil in the pan, drain the rest.

    Cut chicken into bite-sized pieces. Season with salt and pepper, then brown in the hot oil, stirring occasionally, ~6 minutes until edges are golden.

    Add sliced red onion, minced ginger, and whole habanero. Stir for 30 seconds until fragrant, then pour in canned tomatoes with juice.

    Simmer for 6 minutes until sauce thickens slightly. Fold in fried plantains, toss gently, and serve hot. Remove habanero before eating if you prefer less heat.
