Ingredients

  • 1.5 lb beef tripe
  • 3 tbsp gochujang (Korean red chili paste)
  • 4 cloves garlic
  • 1 large tomato
  • 3 leaves kaffir lime leaves
  • 4 stalks green onions
  • 2 whole red chili peppers
  • 2 cups water

Instructions

    Rinse the 1.5 lb beef tripe and cut into bite-sized pieces. Slice the 4 garlic cloves and chop the 1 large tomato; set aside.

    In a large pot, combine the tripe, 2 cups water, and 3 tbsp gochujang. Stir to dissolve the paste, then bring to a boil over high heat.

    Reduce heat to low, add the sliced garlic, chopped tomato, 3 kaffir lime leaves, and 2 whole red chili peppers. Cover and simmer gently.

    Cook until the tripe is tender and the sauce has thickened slightly, about 40 minutes. The tripe should be easily pierced with a fork.

    Slice the 4 green onions into 1-inch pieces and stir them into the pot. Cook for 2 more minutes until the onions are just wilted.

    Taste and adjust seasoning with salt if needed. Serve hot, spooning the spicy sauce over rice or noodles.
