Spicy Beef-Stuffed Peppers

Ingredients
- 2 large red bell peppers (or rocoto peppers if available)
- ½ lb ground beef
- ½ medium yellow onion, diced
- ¾ cup queso fresco or feta cheese, crumbled
- ½ cup sour cream or Greek yogurt
- 1 tbsp white vinegar
- 2 tbsp fresh cilantro, chopped

Slice the tops off peppers and scoop out seeds. Arrange peppers cut-side up on a sheet pan.

Heat a skillet over medium-high. Cook ground beef with diced onion, breaking up the meat, until no pink remains, about 5 minutes.

Stir in half the queso fresco and 1 tbsp vinegar. Season with salt and pepper to taste.

Divide the beef mixture between the pepper halves. Sprinkle remaining cheese on top. Bake at 400°F until peppers are tender and edges char, 10 minutes.

Whisk sour cream with 1 tbsp water and a pinch of salt until pourable. Drizzle over hot peppers and garnish with cilantro.
