Ingredients
- 1.5 lb beef sirloin or chuck, cut into 1-inch cubes
- 3 tbsp aji amarillo paste
- 2 tbsp red wine vinegar
- 1 tsp cumin
- 1 whole lime (juiced)
- 4 whole wooden skewers (4 long or 8 short)

Soak wooden skewers in water for 5 minutes while you prep the beef.

Toss beef cubes with aji amarillo, vinegar, cumin, and a big pinch of salt and pepper in a bowl.

Thread 5–6 beef cubes onto each skewer, packing them snug; reserve leftover sauce.
