Ingredients
- 1.5 lbs beef sirloin or tenderloin, cut into 1.5-inch cubes
- 1 tbsp cumin
- 3 tbsp white vinegar
- 2 whole jalapeño or serrano chili, chopped
- ½ cup fresh cilantro, chopped
- 3 whole garlic cloves, minced

Thread beef cubes onto skewers, spacing evenly. Pat dry with paper towels.

Mix cumin, 2 tbsp vinegar, minced garlic, and salt into a paste. Rub all over beef.

Heat a grill or cast-iron skillet over high heat until smoking, about 2 minutes.

Blend jalapeños, cilantro, garlic, remaining vinegar, salt, and 2 tbsp water until smooth.
