Ingredients

  • 1.5 lbs beef sirloin or tenderloin, cut into 1.5-inch cubes
  • 1 tbsp cumin
  • 3 tbsp white vinegar
  • 2 whole jalapeño or serrano chili, chopped
  • ½ cup fresh cilantro, chopped
  • 3 whole garlic cloves, minced

Instructions

    Thread beef cubes onto skewers, spacing evenly. Pat dry with paper towels.

    Mix cumin, 2 tbsp vinegar, minced garlic, and salt into a paste. Rub all over beef.

    Heat a grill or cast-iron skillet over high heat until smoking, about 2 minutes.

    Sear skewers 2 minutes per side without moving. Interior should stay pink; edges char.

    Blend jalapeños, cilantro, garlic, remaining vinegar, salt, and 2 tbsp water until smooth.

    Serve skewers hot with ají verde drizzled over or on the side.
