Ingredients
- 1.25 lb beef heart, cleaned and cut into 1.5-inch cubes
- 1.5 tsp cumin
- 1 tsp smoked paprika
- 3 tbsp white vinegar
- 4 clove garlic, minced
- 1 tbsp aji amarillo paste (or hot paprika mixed with oil)

Pat beef heart dry with paper towels. Trim any white connective tissue from the cubes.

In a bowl, whisk together cumin, paprika, vinegar, garlic, aji paste, olive oil, salt, and pepper.

Add beef heart cubes to the marinade and toss to coat. Let sit 8–10 minutes while you heat your pan.

Thread beef cubes onto skewers, leaving a tiny gap between pieces. Heat a cast iron skillet over high heat until smoking, ~2 minutes.

Sear skewers 2 minutes per side without moving — surface should char and look blackened. Cook all sides until a deep brown crust forms.

Transfer to a plate and rest 3 minutes. Drizzle with any pan drippings. Serve hot.
