Marinated beef heart threaded onto skewers and seared until charred outside, tender inside — a Peruvian street-food classic that tastes way more impressive than the 20 minutes it takes.

Ingredients

  • 1.25 lb beef heart, cleaned and cut into 1.5-inch cubes
  • 1.5 tsp cumin
  • 1 tsp smoked paprika
  • 3 tbsp white vinegar
  • 4 clove garlic, minced
  • 1 tbsp aji amarillo paste (or hot paprika mixed with oil)
  • 2 tbsp olive oil

Instructions

  1. 1

Pat beef heart dry with paper towels. Trim any white connective tissue from the cubes.

  2. 2

In a bowl, whisk together cumin, paprika, vinegar, garlic, aji paste, olive oil, salt, and pepper.

  3. 3

Add beef heart cubes to the marinade and toss to coat. Let sit 8–10 minutes while you heat your pan.

  4. 4

Thread beef cubes onto skewers, leaving a tiny gap between pieces. Heat a cast iron skillet over high heat until smoking, ~2 minutes.

  5. 5

Sear skewers 2 minutes per side without moving — surface should char and look blackened. Cook all sides until a deep brown crust forms.

  6. 6

Transfer to a plate and rest 3 minutes. Drizzle with any pan drippings. Serve hot.
