Ingredients
- 2 cups cooked rice
- 1 cup shredded mozzarella
- ½ cup diced ham
- 1 cup breadcrumbs
- 2 large eggs
- 1 cup canned crushed tomatoes
- 2 tbsp olive oil
- ½ tsp salt

In a bowl, mix 2 cups cooked rice, 1/2 cup diced ham, and 1/2 tsp salt until well combined.

Shape the rice mixture into 8 balls, pressing a cube of mozzarella into the center of each and sealing the rice around it.

Beat 2 eggs in a shallow dish. Roll each rice ball in the beaten eggs, then coat evenly with 1 cup breadcrumbs.

Heat 2 tbsp olive oil in a large skillet over medium heat. Add the arancini and cook until golden brown on all sides, about 8-10 minutes, turning occasionally.
