Ingredients
- 1 cup sushi rice
- ½ pound ahi tuna
- ¼ pound shrimp
- 1 medium cucumber
- 2 stalks green onions
- 1 tablespoon sesame seeds
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar

Cook the 1 cup sushi rice according to package directions, then let it cool slightly.

While rice cooks, dice the 0.5 pound ahi tuna into 1/2-inch cubes and place in a bowl.

Peel and devein the 0.25 pound shrimp, then chop into small pieces and add to the tuna.

Slice the 1 cucumber into thin rounds and chop the 2 green onions, separating white and green parts.

In a small bowl, whisk the 2 tbsp soy sauce and 1 tbsp rice vinegar. Pour over the tuna and shrimp, toss gently, and let marinate for 5 minutes.

To assemble, press half the rice into a bowl, layer with cucumber slices, then the marinated seafood, and top with remaining rice.

Invert onto a plate, sprinkle with the 1 tbsp sesame seeds and green onion greens. Serve immediately.
