Aleppo Kibbeh

Ingredients

  • 1 cup bulgur wheat
  • 1 pound ground beef
  • 2 medium tomatoes
  • 1 medium green bell pepper
  • 1 medium cucumber
  • 1 whole lemon
  • ½ cup fresh parsley
  • 2 tablespoons olive oil

Instructions

    Soak the 1 cup bulgur in 1 cup hot water for 10 minutes until tender; drain any excess water.

    In a bowl, mix the soaked bulgur with the 1 pound ground beef and 1 teaspoon salt; knead until well combined.

    Shape the mixture into 2-inch oval patties, about 1 inch thick.

    Heat the 2 tbsp olive oil in a large skillet over medium heat; cook the patties until browned and cooked through, about 5 minutes per side.

    While patties cook, chop the 2 tomatoes, 1 green pepper, and 1 cucumber into small dice; place in a serving bowl.

    Slice the 1 lemon into wedges and chop the 0.5 cup parsley; set aside for garnish.

    Serve the hot kibbeh over the chopped vegetables, then squeeze lemon wedges over and sprinkle with parsley.
