Ingredients

  • 1.5 lb ground beef
  • 1 medium onion, diced
  • 2 cups red enchilada sauce
  • 1 cup cornmeal
  • 1.5 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 pinch salt and pepper to taste

Instructions

    Heat a 10-inch cast iron skillet over medium-high. Cook ground beef, breaking it up with a spoon, until no pink remains, ~6 minutes.

    Add diced onion to the beef and cook until softened, ~3 minutes.

    Stir in enchilada sauce. Simmer for 3 minutes until heated through.

    In a small bowl, whisk cornmeal, broth, salt, and pepper until smooth.

    Pour cornmeal mixture evenly over the beef layer. Do not stir.

    Sprinkle cheese over the top. Bake at 375°F for 20 minutes until topping is golden and set.
