Ingredients
- 1.5 lb ground beef
- 1 medium onion, diced
- 2 cups red enchilada sauce
- 1 cup cornmeal
- 1.5 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 pinch salt and pepper to taste

Heat a 10-inch cast iron skillet over medium-high. Cook ground beef, breaking it up with a spoon, until no pink remains, ~6 minutes.
