Ingredients
- 1.5 lb lamb shoulder, cut into 1-inch cubes
- 1 whole red bell pepper, cut into 1-inch chunks
- 1 whole red onion, cut into 1-inch chunks
- ⅓ cup apricot jam
- 3 tbsp white vinegar
- 1 tsp ground coriander

Soak 8 wooden skewers in water for 5 minutes. Thread lamb, pepper, and onion onto each skewer, alternating pieces.

Whisk apricot jam, vinegar, coriander, 1 tbsp oil, and a pinch each of salt and pepper in a small bowl until smooth.

Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Working in batches, sear skewers 2–3 minutes per side until lamb is golden and caramelized, turning once.

Return all skewers to the pan. Pour apricot glaze over top and turn to coat evenly.

Cook 2 more minutes, turning occasionally, until glaze is glossy and lamb is cooked through (145°F for medium).
