Ingredients

  • 1 lb lamb shoulder or neck fillet, cut into 1-inch cubes
  • 1.5 tsp ground cayenne pepper
  • 1 tsp smoked paprika
  • ¾ tsp garlic powder
  • ½ tsp ground ginger
  • 3 tbsp peanut butter (or tahini)

Instructions

  1. 1

Mix cayenne, paprika, garlic powder, ginger, salt, and peanut butter in a bowl until it forms a thick paste.

  2. 2

Coat lamb cubes thoroughly with the spice paste, tossing until every piece is evenly coated.

  3. 3

Heat a cast iron skillet or grill pan over high heat until it starts to smoke, about 2 minutes.

  4. 4

Working in batches, sear lamb 2 minutes per side, letting edges blacken slightly and char. Transfer to a plate.

  5. 5

Squeeze fresh lime over the meat and serve immediately while still sizzling.
