Ingredients
- 1 lb ground beef
- 1 medium onion
- 2 medium tomato
- 2 cloves garlic
- 2 tsp curry powder
- 2 tbsp vegetable oil

Heat the 2 tbsp vegetable oil in a large skillet over medium-high. Add the 1 diced onion and cook, stirring, until soft and golden, about 5 minutes.

Add the 2 minced garlic cloves and 2 tsp curry powder, stir for 30 seconds until fragrant.

Add the 1 lb ground beef, breaking it up with a spoon. Cook until browned and no longer pink, about 5-7 minutes.

Stir in the 2 chopped tomatoes and 1/2 cup water. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper to taste.
