Ingredients

  • 1.5 lbs beef sirloin or chuck, cut into 1-inch cubes
  • 2 tbsp fresh ginger, minced
  • 4 cloves garlic cloves, minced
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper
  • 1 whole lime or lemon
  • 1 medium yellow onion, cut into 1-inch chunks

Instructions

    Toss beef cubes with ginger, garlic, cumin, cayenne, half the lime juice, salt, and pepper until coated. Let sit 5 minutes.

    Thread beef and onion chunks alternately onto 4 metal or soaked wooden skewers, packing tightly.

    Heat a grill or grill pan over medium-high until you can hold your hand 3 inches above for 2 seconds.

    Lay skewers on the grill. Cook 8–10 minutes, rolling every 2 minutes, until beef is charred and just cooked through.

    Remove skewers to a plate. Squeeze remaining lime over the top and season with a pinch of salt.

    Serve hot with lime wedges and flatbread or rice on the side.
