Ingredients

  • 1.5 lbs ground beef
  • ½ large yellow onion, finely minced
  • ⅓ cup fresh parsley, finely chopped
  • 1.5 tsp cumin
  • 1 tsp coriander
  • ½ tsp paprika
  • ½ whole lemon

Instructions

    Combine ground beef, minced onion, parsley, cumin, coriander, paprika, salt, and pepper in a bowl.

    Divide mixture into 8 equal portions. Mold each firmly around metal skewers, pressing to form long, even cylinders.

    Heat a grill or cast iron skillet over medium-high until very hot, about 2 minutes.

    Grill kofta 3-4 minutes per side, rotating once, until deeply browned and cooked through (160°F internal).
