Charred Beef Kofta with Grilled Veg & Two Sauces

Ingredients
- 1.25 lb ground beef
- 1 large red onion, divided (1/2 minced + 1/2 sliced for serving)
- ½ cup fresh cilantro, chopped
- 1.5 tsp cumin
- 2 large bell peppers (any color), halved lengthwise
- 4 medium tomatoes, halved
- 1 tsp chili powder or Aleppo pepper
- ½ cup plain yogurt

Mix ground beef, minced onion, half the cilantro, cumin, salt, and pepper in a bowl until just combined. Don't overwork it.

Wet your hands and divide the mixture into 8 portions, molding each into a ball. Press and elongate each ball into a kofta shape, ~4 inches long.

Heat a grill or grill pan to medium-high. Oil the grate lightly. Lay the koftas, peppers (cut-side down), and tomatoes (cut-side down) on the grate.

Grill koftas 3–4 minutes per side until charred at the edges and cooked through. Vegetables will char in 2–3 minutes per side; pull them off as they soften.

Stir chili powder into yogurt with salt and a squeeze of lemon. Fold remaining cilantro, lemon juice, and salt into a separate small bowl as a raw chutney.

Plate the koftas and charred vegetables, scatter sliced onion over top, and serve with both sauces on the side.
