Ingredients
- ½ lb ground beef
- ¼ cup onion, finely diced
- 1.5 tsp cumin, paprika, and dried oregano (or baharat spice mix)
- 2 cups cherry tomatoes, bell peppers, and red onion (for grilling)
- 3 tbsp olive oil
- 2 pieces flatbread (store-bought, 2 pieces)

Mix ground beef with diced onion, spices, salt, and pepper until just combined. Divide into 4 portions and mold each around a wooden skewer into a log shape.

Toss cherry tomatoes, peppers, and onion chunks with 1 tbsp oil, salt, and pepper on a sheet pan. Arrange in a single layer.

Brush kofta with 1 tbsp oil. Nestle skewers between vegetables on the pan. Set oven to broil on high.

Broil 8–10 minutes, stirring vegetables halfway through. Kofta should be cooked through and charred at edges.

Brush flatbread with remaining 1 tbsp oil and warm on the pan for the last 2 minutes of broiling until lightly charred.

Slide kofta and vegetables onto a plate. Serve with warm flatbread alongside.
