Ingredients
- ½ lb ground beef
- ½ lb ground chicken
- ½ medium red onion, finely minced
- ¼ cup fresh parsley, chopped
- 1.5 tsp ground cumin and coriander
- ¼ cup tahini

Mix beef, chicken, onion, parsley, cumin, coriander, and 1 tsp salt in a bowl until just combined.

Wet your hands. Divide mixture into 8 equal portions and mold each onto a metal skewer, forming a tight cylinder.

Arrange kofta on an oiled sheet pan. Drizzle with olive oil and roast at 425°F until edges char and meat reaches 160°F inside, 12–15 minutes.
