Ingredients

  • ½ lb ground beef
  • ½ lb ground chicken
  • ½ medium red onion, finely minced
  • ¼ cup fresh parsley, chopped
  • 1.5 tsp ground cumin and coriander
  • ¼ cup tahini

Instructions

    Mix beef, chicken, onion, parsley, cumin, coriander, and 1 tsp salt in a bowl until just combined.

    Wet your hands. Divide mixture into 8 equal portions and mold each onto a metal skewer, forming a tight cylinder.

    Arrange kofta on an oiled sheet pan. Drizzle with olive oil and roast at 425°F until edges char and meat reaches 160°F inside, 12–15 minutes.

    While kofta roasts, whisk tahini with 2 tbsp lemon juice, 1 minced garlic clove, and 4 tbsp water until creamy and pourable.

    Remove kofta from oven and rest 2 minutes. Serve with tahini sauce and warm pita bread.
