Ingredients

  • 1 lb ground beef
  • ¾ lb ground chicken
  • ¾ lb ground lamb
  • ½ medium onion, finely minced
  • 2 tbsp baharat spice blend (or cumin + coriander + paprika)
  • ½ cup tahini
  • 1 whole lemon (juiced)

Instructions

  1. 1

Soak 12 wooden skewers in water for 10 minutes while you prep.

  2. 2

Mix ground beef with half the minced onion and 1 tbsp baharat, 1/2 tsp salt, 1/4 tsp pepper until just combined—don't overwork.

  3. 3

Repeat with chicken and lamb, each with remaining onion and baharat (split the spice blend evenly across all three meats).

  4. 4

Divide each meat into 4 portions; mold firmly onto skewers in long, thin logs, pressing to help them stick.

  5. 5

Preheat grill or grill pan to high; brush grates with oil. Grill skewers 8–10 minutes, rotating every 2 minutes, until charred and cooked through.

  6. 6

Whisk tahini with lemon juice, 3 tbsp water, 1 minced garlic clove, and salt to taste until pourable. Serve kebabs with sauce, pita, cucumber, and tomato.

Tools you’ll need

  • 12 wooden skewers
  • grill or grill pan
