Ingredients
- 1 lb ground beef
- ¾ lb ground chicken
- ¾ lb ground lamb
- ½ medium onion, finely minced
- 2 tbsp baharat spice blend (or cumin + coriander + paprika)
- ½ cup tahini
- 1 whole lemon (juiced)

Soak 12 wooden skewers in water for 10 minutes while you prep.

Mix ground beef with half the minced onion and 1 tbsp baharat, 1/2 tsp salt, 1/4 tsp pepper until just combined—don't overwork.

Repeat with chicken and lamb, each with remaining onion and baharat (split the spice blend evenly across all three meats).

Divide each meat into 4 portions; mold firmly onto skewers in long, thin logs, pressing to help them stick.
