Ingredients

  • 1.5 lbs chicken thighs, boneless and skinless, cut into 1.5-inch chunks
  • 3 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1.5 tsp ground cumin
  • 1 tsp paprika
  • ¼ cup tahini
  • ⅓ cup fresh cilantro or parsley, chopped
  • 4 pieces warm pita bread or flatbread

Instructions

    Toss chicken chunks with lemon juice, garlic, cumin, paprika, salt, and pepper in a bowl.

    Thread chicken onto skewers, dividing evenly. Reserve any leftover marinade.

    Heat oil in a large skillet or cast iron over medium-high until shimmering, about 90 seconds.

    Lay skewers in the pan; sear without moving for 3 minutes until edges char deeply.

    Flip and sear another 3 minutes until chicken is cooked through and edges are caramelized.

    Drizzle tahini mixed with 2 tbsp lemon juice and 2 tbsp water over skewers. Top with fresh herbs.

    Serve immediately with warm pita and any pan juices.
