Ingredients

  • ¾ lb beef sirloin, cut into 1-inch cubes
  • 4 cloves garlic, minced
  • 1 whole lemon, juiced
  • 3 tbsp tahini
  • 1.5 cups cooked white rice
  • ¼ cup fresh parsley, chopped

Instructions

  1. 1

Thread beef cubes onto skewers. Toss with minced garlic, lemon juice, 2 tbsp olive oil, salt, and pepper.

  2. 2

Heat a cast iron skillet or grill pan over high heat until smoking, about 2 minutes.

  3. 3

Sear skewers 2 minutes per side without moving — beef should be charred on the outside, rare to medium-rare inside.

  4. 4

Whisk tahini with 2 tbsp lemon juice, 2 tbsp water, 1 minced garlic clove, salt, and pepper until pourable.

  5. 5

Warm rice in a saucepan or microwave, about 2 minutes. Spread on plates.

  6. 6

Top rice with skewers, drizzle tahini sauce, and scatter parsley over the top.

Tools you’ll need

  • metal skewers (or bamboo soaked 30 minutes)
  • 12-inch cast iron skillet or grill pan
  • small bowl for tahini sauce
  • saucepan or microwave
