Ingredients
- 1 lb ground beef
- ¼ medium, finely diced red onion
- 1 tsp cumin
- ½ tsp paprika
- ¼ cup, chopped fresh parsley
- 2 cups arugula
- 1 cup, halved cherry tomatoes

Combine beef, diced onion, cumin, paprika, parsley, 0.5 tsp salt, and a pinch of black pepper in a bowl.

Divide mixture into 8 portions and mold each around a metal skewer, pressing firmly into a log shape.

Heat a grill or grill pan over medium-high until very hot, about 2 minutes.

Grill kofta 3–4 minutes per side, rotating once, until charred outside and cooked through.

Toss arugula and cherry tomatoes with a pinch of salt, pepper, and a drizzle of olive oil.
