- 1.5 lb potatoes
- ¼ cup olive oil
- ½ cup tomato sauce
- 1 tsp smoked paprika
- ½ tsp chili flakes
- 2 cloves garlic
- 2 tbsp fresh parsley
- 1 tsp salt

Cut the 1.5 lb potatoes into 1-inch cubes. Place in a bowl, cover with cold water, and soak for 10 minutes. Drain and pat dry thoroughly with a clean towel.

Heat the 1/4 cup olive oil in a large skillet over medium-high heat. Add the potatoes in a single layer, being careful not to crowd the pan. Cook undisturbed for 5 minutes until the bottoms are golden.

Stir the potatoes and continue cooking, turning occasionally, until they are golden and crisp on all sides, about 15-20 minutes. Season with 1 tsp salt.

While the potatoes cook, make the sauce: in a small saucepan, combine the 1/2 cup tomato sauce, 1 tsp smoked paprika, 1/2 tsp chili flakes, and 2 minced garlic cloves. Simmer over low heat for 5 minutes until slightly thickened.

Transfer the crispy potatoes to a serving plate. Spoon the spicy sauce over the top or serve on the side. Garnish with 2 tbsp chopped fresh parsley before serving.
