- 2 cups all-purpose flour
- 3 large eggs
- ½ cup water
- 1 teaspoon salt

In a large bowl, combine the 2 cups flour and 1 teaspoon salt. Make a well in the center and crack the 3 eggs into it.

Using a fork, gradually incorporate the flour into the eggs, then add the 1/2 cup water a little at a time, stirring until a thick, sticky batter forms.

Beat the batter vigorously with a wooden spoon for 2-3 minutes, until it becomes smooth and elastic. It should be too thick to pour but will slowly drop from a spoon.

Let the dough rest for 5 minutes. Meanwhile, bring a large pot of salted water to a boil.

Press the dough through a spätzle maker or a colander with large holes directly into the boiling water. Cook for 2-3 minutes, until the spätzle float to the surface. Remove with a slotted spoon and serve immediately.
