Ingredients

  • 1.5 lb pork spare ribs, cut into 2-inch pieces
  • 3 tbsp soy sauce
  • 2 tbsp granulated sugar
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 3 cups mixed greens (arugula, spinach, or baby kale)

    Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Add pork ribs in a single layer and sear without stirring for 3 minutes until edges brown.

    Stir ribs and cook 2 more minutes. Add soy sauce, sugar, vinegar, and ginger; toss to coat.

    Reduce heat to medium and simmer uncovered for 8 minutes, stirring occasionally until sauce thickens and ribs glaze.

    Toss greens with a pinch of salt, pepper, and a splash of the pan sauce if desired.
