Ingredients

  • 1.5 lb pork spare ribs, cut into 2-inch pieces
  • 14 oz firm tofu, pressed and cut into 1-inch cubes
  • 4 tbsp soy sauce
  • 3 tbsp mirin (or 2 tbsp sugar + 1 tbsp water)
  • 1 tbsp rice vinegar
  • 1 tbsp ginger, minced
  • 2 stalks scallions, sliced (optional garnish)

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, ~1 minute.

    Working in batches, pan-fry tofu cubes until golden brown on all sides, ~6 minutes total. Transfer to a plate.

    Add pork ribs to the same skillet and sear, turning occasionally, until browned, ~5 minutes. Season with salt and pepper.

    Add ginger and cook for 30 seconds until fragrant.

    Whisk together soy sauce, mirin, and rice vinegar. Pour over the ribs, add 1/4 cup water, and bring to a simmer.

    Simmer for 8 minutes, stirring occasionally, until ribs are tender and sauce coats the meat.

    Return tofu to the skillet for 1 minute to warm through. Serve immediately, garnish with scallions if desired.
