Ingredients
- 1.5 lb pork spare ribs, cut into 2-inch pieces
- 14 oz firm tofu, pressed and cut into 1-inch cubes
- 4 tbsp soy sauce
- 3 tbsp mirin (or 2 tbsp sugar + 1 tbsp water)
- 1 tbsp rice vinegar
- 1 tbsp ginger, minced
- 2 stalks scallions, sliced (optional garnish)

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, ~1 minute.

Working in batches, pan-fry tofu cubes until golden brown on all sides, ~6 minutes total. Transfer to a plate.

Add pork ribs to the same skillet and sear, turning occasionally, until browned, ~5 minutes. Season with salt and pepper.

Add ginger and cook for 30 seconds until fragrant.

Whisk together soy sauce, mirin, and rice vinegar. Pour over the ribs, add 1/4 cup water, and bring to a simmer.
