Ingredients
- 1 lb pork spare ribs (thin-cut, 1-inch thick)
- 3 tbsp soy sauce
- 2 tbsp mirin (or honey)
- 8 oz mushrooms (cremini or shiitake, halved)
- 1 lb potatoes (russet or yukon gold)
- 2 tbsp butter
- 1 piece ginger (1-inch piece, minced)

Cut potatoes into 1-inch chunks. Boil in salted water until fork-tender, about 12 minutes.

Pat ribs dry. Season with salt and pepper. Heat 1 tbsp oil in a large skillet over medium-high until it shimmers.

Sear ribs in a single layer without moving for 3 minutes until deeply golden, then flip and sear 3 minutes more.
