Ingredients

  • 1 lb pork spare ribs (thin-cut, 1-inch thick)
  • 3 tbsp soy sauce
  • 2 tbsp mirin (or honey)
  • 8 oz mushrooms (cremini or shiitake, halved)
  • 1 lb potatoes (russet or yukon gold)
  • 2 tbsp butter
  • 1 piece ginger (1-inch piece, minced)

Instructions

    Cut potatoes into 1-inch chunks. Boil in salted water until fork-tender, about 12 minutes.

    Pat ribs dry. Season with salt and pepper. Heat 1 tbsp oil in a large skillet over medium-high until it shimmers.

    Sear ribs in a single layer without moving for 3 minutes until deeply golden, then flip and sear 3 minutes more.

    Mix soy sauce, mirin, and minced ginger in a bowl. Pour into the pan, tilting to coat all ribs, and simmer 4 minutes.

    Push ribs to the side. Add mushrooms, season with salt, and sauté 3 minutes until golden on the edges.

    Drain potatoes. Mash with butter and a splash of milk or water until creamy. Serve ribs and mushrooms over potatoes.
