Ingredients
- 2 pieces (about 5 oz each) pork loin cutlets or chops, boneless
- 2 tbsp white miso paste
- 1.5 tbsp mirin (sweet rice wine)
- ½ cup panko breadcrumbs
- 2 cups napa cabbage, shredded
- 1 cup daikon radish, grated
- 1.5 cups cooked sushi rice or short-grain rice

Mix white miso and mirin in a small bowl until smooth and glossy.

Pat pork cutlets dry. Pound each to 1/4-inch thickness using a meat mallet.

Brush both sides of each cutlet generously with miso-mirin mixture, then coat with panko, pressing gently.

Heat oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

Sear cutlets 3–4 minutes per side without moving until golden brown and cooked through.

Divide rice between bowls, top each with a cutlet, and arrange shredded cabbage and grated daikon alongside.
