Ingredients
- 1.5 lbs beef short ribs (flanken-cut, 1/4-inch thick)
- 4 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp fresh ginger, minced
- 3 clove garlic cloves, minced
- 1 tbsp sesame oil
- 3 stalk scallions, chopped (plus sesame seeds for garnish)

Mix soy sauce, brown sugar, ginger, and garlic in a small bowl until sugar dissolves.

Pat beef dry with paper towels. Season both sides generously with salt and black pepper.

Heat 1 tbsp neutral oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Working in batches, sear ribs 90 seconds per side without moving. Transfer to a plate.

Pour glaze into the skillet. Return ribs to the pan and turn to coat, ~2 minutes until edges caramelize.
