Ingredients

  • 1.5 lbs beef short ribs (flanken-cut, 1/4-inch thick)
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp fresh ginger, minced
  • 3 clove garlic cloves, minced
  • 1 tbsp sesame oil
  • 3 stalk scallions, chopped (plus sesame seeds for garnish)

Instructions

  1. 1

Mix soy sauce, brown sugar, ginger, and garlic in a small bowl until sugar dissolves.

  2. 2

Pat beef dry with paper towels. Season both sides generously with salt and black pepper.

  3. 3

Heat 1 tbsp neutral oil in a large skillet over medium-high until it shimmers, about 90 seconds.

  4. 4

Working in batches, sear ribs 90 seconds per side without moving. Transfer to a plate.

  5. 5

Pour glaze into the skillet. Return ribs to the pan and turn to coat, ~2 minutes until edges caramelize.

  6. 6

Drizzle sesame oil over the ribs. Garnish with scallions and sesame seeds. Serve immediately.
