Ingredients
- 1 cup urad dal (split black gram)
- ½ cup water
- 1 teaspoon salt
- ½ cup green chutney
- 2 cups oil for frying

Soak the 1 cup urad dal in water for 4 hours, then drain well. (If short on time, soak in hot water for 1 hour.)

Blend the drained dal with 0.5 cup water and 1 teaspoon salt into a thick, smooth batter. It should be fluffy and hold its shape when dropped from a spoon.

Heat 2 cups oil in a deep pan over medium-high until a drop of batter sizzles and floats, about 350°F. Wet your hands, take a golf-ball-sized portion of batter, and shape into a round patty with a hole in the center.

Carefully slide 3-4 patties into the hot oil. Fry, turning once, until deep golden brown and crisp, about 4-5 minutes per batch. Drain on paper towels.
