Ingredients

  • ¾ lb ground beef
  • 4 cups beef broth
  • 1 can (13.5 oz) coconut milk
  • 1 medium potato, diced small
  • 1 tsp turmeric powder
  • 3 cloves garlic, minced
  • ½ whole lime (juiced)
  • ¼ cup fried shallots

Instructions

    Heat oil in a large pot over medium-high. Add ground beef, breaking up with a spoon, until no pink remains, ~5 minutes.

    Stir in minced garlic and turmeric powder. Cook for 60 seconds until fragrant, then add diced potato.

    Pour in beef broth and coconut milk. Bring to a boil, then reduce heat and simmer until potato is tender, ~10 minutes.

    Squeeze in lime juice. Taste and season with salt and pepper.

    Serve soup over steamed white rice in bowls. Top with fried shallots and a pinch of sambal if desired.
