Ingredients

  • ½ lb beef or pork sausage, sliced into half-moons
  • ½ lb deli ham or kielbasa, diced
  • 6 cups beef broth
  • 2 cups diced potatoes
  • 1 large dill pickle, diced (plus 3 tbsp brine)
  • ¾ cup green olives, pitted and halved
  • 2 tbsp tomato paste
  • 1 medium yellow onion, diced

Instructions

    Heat a large pot over medium-high. Brown sausage and ham together, stirring occasionally, until edges caramelize, ~4 minutes.

    Add onion and cook until softened and translucent, ~2 minutes.

    Stir in tomato paste and cook for 30 seconds until fragrant.

    Pour in broth and add diced potatoes. Bring to a boil, then reduce to a simmer for 8 minutes until potatoes are tender.

    Stir in diced pickle, pickle brine, and olives. Simmer for 2 more minutes to blend flavors.
