Ingredients

  • 6 oz deli meats (kielbasa, ham, or salami), sliced into 1/2-inch rounds
  • 4 cups beef broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 large dill pickle, diced
  • ½ cup green olives with pits, halved
  • 1 medium onion, diced
  • 2 tbsp fresh dill, chopped (or 1 tsp dried dill)

Instructions

    Heat olive oil in a large pot over medium-high heat. Add onion and cook until softened, about 3 minutes.

    Add deli meat slices and stir for 1 minute until edges brown slightly.

    Pour in broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 8 minutes.

    Stir in diced pickle, olives, and fresh dill. Simmer for 2 more minutes until flavors blend.

    Taste and season with salt and black pepper. Ladle into bowls and serve hot with sliced bread.
