Ingredients

- 1 cup water
- 3 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper

In a medium bowl, whisk together the 1 cup chickpea flour, 1 cup water, 2 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp black pepper until smooth. Let the batter rest for 15 minutes.

Place a 9-inch cast-iron skillet in the oven and preheat to 450°F (230°C) for 10 minutes.

Carefully remove the hot skillet from the oven. Add the remaining 1 tbsp olive oil and swirl to coat the bottom.
