Ingredients

  • 1 cup chickpea flour
  • 1 cup water
  • 3 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

    In a medium bowl, whisk together the 1 cup chickpea flour, 1 cup water, 2 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp black pepper until smooth. Let the batter rest for 15 minutes.

    Place a 9-inch cast-iron skillet in the oven and preheat to 450°F (230°C) for 10 minutes.

    Carefully remove the hot skillet from the oven. Add the remaining 1 tbsp olive oil and swirl to coat the bottom.

    Pour the batter into the hot skillet, tilting to spread evenly. Bake for 12-15 minutes, until the edges are crisp and the top is golden brown.

    Remove from the oven and let cool for 2 minutes. Slice into wedges and serve warm with your favorite sauce.
