Ingredients

  • 1.5 lbs pork shoulder or pork butt, cut into 1.5-inch cubes
  • 2 tbsp smoked paprika
  • 3 tbsp red wine vinegar
  • 4 cloves garlic, minced
  • 1 medium onion, thinly sliced (for serving)
  • ¼ cup fresh parsley, roughly chopped
  • 1 whole lemon, halved

Instructions

    Toss pork cubes with smoked paprika, vinegar, minced garlic, salt, and pepper in a bowl. Let sit for 10 minutes.

    Thread pork cubes onto metal skewers, packing them tightly with no gaps between pieces.

    Heat a grill or grill pan to medium-high until a water drop sizzles instantly on contact.

    Grill skewers 3 minutes per side without moving, until edges char and internal temp hits 145°F.

    Transfer to a platter. Squeeze lemon over the top, sprinkle parsley and sliced onion.
