Ingredients

  • 4 whole smoked pork loin chops
  • 2 cups sauerkraut
  • 1.5 pounds potatoes
  • 1 medium onion
  • 2 tablespoons vegetable oil
  • 1 teaspoon caraway seeds

Instructions

    Thinly slice the 1 medium onion and cut the 1.5 pounds potatoes into 1/2 inch cubes. Pat the 4 smoked pork loin chops dry with paper towels.

    Heat the 2 tablespoons vegetable oil in a large skillet over medium-high. Add the pork chops and cook until browned on both sides, about 3 minutes per side. Transfer to a plate.

    In the same skillet, add the sliced onion and potato cubes. Cook, stirring occasionally, until the potatoes start to soften and brown, about 8 minutes.

    Stir in the 2 cups sauerkraut and 1 teaspoon caraway seeds. Nestle the pork chops back into the skillet. Cover and cook until the potatoes are tender and the pork is heated through, about 5 minutes.
