Ingredients

  • 4 pieces chicken quarters (thighs + legs), skin-on
  • 2 tsp liquid smoke
  • 1.5 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 tsp kosher salt

Instructions

  1. 1

Pat chicken dry with paper towels. Rub liquid smoke, paprika, garlic powder, salt, and pepper all over skin and under any flaps.

  2. 2

Heat 2 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

  3. 3

Lay chicken skin-side down in the skillet. Sear without moving 5–6 minutes until skin is golden brown and crispy.

  4. 4

Flip chicken. Reduce heat to medium-low, cover, and cook 6–8 minutes until internal temp hits 165°F at the thickest part.

  5. 5

Uncover, raise heat to medium, and cook 1–2 minutes until edges darken slightly and any pan liquids evaporate.

  6. 6

Transfer to a plate. Rest 2 minutes, then serve hot.
