Ingredients
- 4 pieces chicken quarters (thighs + legs), skin-on
- 2 tsp liquid smoke
- 1.5 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp black pepper
- 1 tsp kosher salt

Pat chicken dry with paper towels. Rub liquid smoke, paprika, garlic powder, salt, and pepper all over skin and under any flaps.

Heat 2 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

Lay chicken skin-side down in the skillet. Sear without moving 5–6 minutes until skin is golden brown and crispy.

Flip chicken. Reduce heat to medium-low, cover, and cook 6–8 minutes until internal temp hits 165°F at the thickest part.
