Ingredients
- 1 bird whole smoked chicken, store-bought (about 3 lbs)
- 3 tbsp butter
- 2 tbsp bourbon or whiskey
- 1 tbsp brown sugar
- 1 tsp smoked paprika
- 1 whole lemon, halved

Heat a large cast-iron skillet over medium-high until a drop of water sizzles on contact, about 2 minutes.

Place smoked chicken skin-side down in the hot skillet. Let it sear without moving for 5 minutes until skin is deeply browned.

Flip the chicken breast-side up. Transfer the skillet to a 425°F oven and roast for 12 minutes until the meat is heated through.

Melt butter in a small saucepan over medium-low. Whisk in bourbon, brown sugar, and smoked paprika until glossy, about 1 minute.

Remove chicken from oven. Brush the glaze over the skin and meat. Char lemon halves cut-side down in the empty skillet for 2 minutes.

Rest chicken 3 minutes. Carve at the table and serve with charred lemon wedges on the side.
