Ingredients
- 1 lb smoked boudin sausage
- 1 whole bell pepper (red or yellow)
- ½ whole yellow onion
- 2 tbsp olive oil
- 1 pinch salt and black pepper to taste

Slice the boudin into 1/4-inch-thick rounds. Slice the bell pepper into 1/2-inch strips.

Slice the onion into 1/2-inch-thick wedges, keeping layers slightly intact.

Heat oil in a 12-inch skillet over medium-high until it shimmers, about 1 minute.

Add boudin slices and sear without stirring until the edges brown and crisp, 2-3 minutes per side.

Push boudin to the side. Add peppers and onion to the skillet and cook, stirring occasionally, until charred and softened, 4-5 minutes.
