Ingredients

  • 1 whole avocado, ripe
  • 2 slices bread (sourdough or thick-cut white)
  • 1 whole eggs
  • 1 tbsp white vinegar
  • 1 pinch flake salt and black pepper

Instructions

    Bring a shallow pot of water to a gentle simmer over medium heat.

    Toast the bread until golden and crisp, about 2–3 minutes per side.

    Add vinegar to the simmering water. Crack the egg into a small cup, then slide it into the water and poach until whites set but yolk jiggles, about 3–4 minutes.

    Halve the avocado and scoop the flesh onto the toast. Mash with a fork until creamy but slightly chunky.

    Lift the egg from the water with a slotted spoon and set it on top of the avocado toast.
