Ingredients

  • ½ lb ground beef
  • ½ lb chorizo, casing removed
  • 1 medium bell pepper (red or yellow), diced
  • ½ medium yellow onion, diced
  • 1.5 cups shredded Oaxaca or mozzarella cheese
  • 8 count corn tortillas
  • 1 small handful fresh cilantro and diced white onion for garnish

Instructions

    Heat a 12-inch skillet over medium-high. Brown ground beef and chorizo, breaking apart with a spoon, until no pink remains, about 6 minutes.

    Add diced pepper and onion. Sauté for 3 minutes, stirring occasionally, until softened and fragrant.

    Spread the meat mixture in an even layer. Top with shredded cheese and cover with a lid or foil.

    Cook covered for 2 minutes until cheese melts. The surface should look glossy and pull apart easily.

    Warm tortillas in a dry skillet or over a gas flame until pliable, about 30 seconds per side.

    Scoop the cheesy meat mixture into tortillas. Top with fresh cilantro and diced onion. Serve immediately.
