Ingredients

  • ½ lb ground beef
  • ¼ lb chorizo, casings removed
  • 6 count corn tortillas
  • 1 cup oaxaca or mozzarella cheese, shredded
  • ¼ count onion, diced
  • ¼ cup pickled jalapeños with brine
  • 2 tbsp fresh cilantro, chopped

Instructions

    Heat a large skillet over medium-high until a drop of water sizzles immediately.

    Add ground beef and chorizo, breaking up with a spoon until no pink remains, about 5 minutes.

    Stir in diced onion and cook until softened, about 2 minutes. Drain excess fat if needed.

    Lay tortillas flat in the skillet over the meat, then top with shredded cheese and jalapeños.

    Cover and cook over medium until cheese melts and tortilla edges brown and crisp, 3–4 minutes.

    Slide onto a plate, scatter cilantro over top, and serve hot.
