  • ¼ lb fresh chorizo, casing removed
  • 8 count corn tortillas
  • ½ medium white onion, diced
  • 1 count lime (juiced)
  • 2 tbsp fresh cilantro, chopped

Instructions

    Heat a 12-inch skillet over medium-high. Add ground beef and chorizo, breaking up with a spoon until no pink remains, about 5 minutes.

    Scatter diced onion into the meat, stir, and cook 2 minutes until the onion softens and the filling smells deeply savory.

    Push the meat mixture to the side. Lay tortillas flat on the hot surface and toast 60 seconds per side until lightly charred and pliable.
