Ingredients

  • 3 whole Roma tomatoes
  • 2 whole jalapeños
  • ¼ cup, packed fresh cilantro
  • 1 whole (juiced) lime
  • 1.5 lb, thinly sliced beef suadero (or brisket point)
  • 8 whole corn tortillas

Instructions

    Heat a dry skillet over medium-high until very hot, ~2 minutes.

    Char the tomatoes and jalapeños directly in the skillet, turning occasionally, until blackened and blistered, ~5 minutes.

    Transfer charred tomatoes and jalapeños to a bowl. Add cilantro and lime juice, then mash coarsely with a fork until chunky.

    Wipe out the skillet and heat over medium-high with a light coat of oil until shimmering, ~1 minute.

    Add sliced suadero in a single layer without moving for 2 minutes until edges crisp, then stir and cook 2–3 minutes more until browned and rendered.

    Warm tortillas in the same skillet 15 seconds per side. Fill with beef, top with salsa, and serve immediately.
