Ingredients

  • 1 lb pork shoulder, sliced into bite-size pieces
  • 1 lb daikon radish, peeled and cut into 1-inch rounds
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 1 tbsp ginger, peeled and julienned
  • 2 cups water

Instructions

    In a large pot, combine 2 cups water, 3 tbsp soy sauce, 2 tbsp mirin, and 1 tbsp sugar. Stir to dissolve the sugar.

    Add 1 lb pork pieces and 1 lb daikon rounds to the pot. Bring to a boil over high heat, then reduce to low and cover.

    Simmer gently until the pork is tender and the daikon is translucent, about 30 minutes. Skim any foam that rises.

    Add 1 tbsp julienned ginger and simmer uncovered for 5 more minutes, until the broth has slightly reduced and flavors meld.

    Serve hot in bowls, spooning the broth over the pork and daikon. Garnish with extra ginger if desired.
