Ingredients

  • 2 medium eggplant
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 1 cup water
  • 2 tbsp bonito flakes

Instructions

    Cut the 2 medium eggplants into 1-inch chunks. If you like, salt them and let sit for 10 minutes, then pat dry to reduce bitterness.

    In a large skillet, combine 1 cup water, 2 tbsp soy sauce, 2 tbsp mirin, and 1 tbsp sugar. Bring to a boil over medium-high heat.

    Add the eggplant chunks to the simmering liquid. Reduce heat to medium-low, cover, and cook until the eggplant is tender and translucent, about 12-15 minutes.

    Uncover and simmer for 2-3 more minutes, until the liquid has reduced to a glossy sauce that coats the eggplant.

    Serve warm or at room temperature, topped with 2 tbsp bonito flakes.
