Simmered Daikon and Squid

Ingredients

  • 1 medium (about 1 lb) daikon radish
  • ½ lb squid (tentacles and bodies)
  • 2 stalks green onions
  • 2 cups dashi stock
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar

Instructions

    Peel the daikon and cut into 1-inch thick rounds. Cut each round into quarters if large. Slice the green onions thinly, separating white and green parts.

    In a pot, combine the 2 cups dashi, 3 tbsp soy sauce, 2 tbsp mirin, and 1 tbsp sugar. Bring to a simmer over medium heat, stirring until sugar dissolves.

    Add the daikon pieces to the pot. Cover and simmer over medium-low heat until the daikon is tender when pierced with a fork, about 20-25 minutes.

    Clean the squid and slice the bodies into rings. Add the squid and the white parts of the green onions to the pot. Simmer uncovered until the squid is just opaque and tender, about 3-5 minutes.

    Taste the broth and adjust seasoning if needed. Serve hot, garnished with the green parts of the green onions.
