Ingredients
- ½ lb raw shrimp, peeled and deveined
- 1 avocado
- ½ red bell pepper
- 2 green onions
- 1 lime
- 1 tbsp olive oil
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- 1
Finely chop the 0.5 lb raw shrimp into small pieces. Place in a bowl and toss with the juice of 1 lime and 0.25 tsp salt. Let marinate while you prep the vegetables.
- 2
Dice the 1 avocado and 0.5 red bell pepper into small cubes. Thinly slice the 2 green onions, keeping white and green parts separate.
- 3
Add the avocado, bell pepper, and white parts of the green onion to the shrimp. Drizzle with 1 tbsp olive oil and season with 0.25 tsp black pepper. Gently fold everything together.
- 4
Taste and adjust seasoning with more lime juice or salt if needed. Let the tartare sit for 5 minutes so the flavors meld.
